I will start by acknowledging outright that this information is an oversimplification of an extremely complex group of processes:
There are 3 macronutrients that comprise your diet: carbohydrate, protein, and fat. Each performs a necessary function in the human body. Carbohydrates are broken down into glucose and are the body's primary energy source. Protein and fats are used primarily for structural maintenance, enzymes, and hormones. In order for your body to perform optimally each of these macronutrients must be supplied through the diet in a proper ratio. Carbohydrate and protein affect the concentration of your blood sugar storage and release hormones, insulin and glucagon respectively. Fat is hormonally neutral and thus elicits neither glucagon or insulin release. The problems with eating a lot of carbohydrates and limiting dietary fat are numerous. Your muscles and liver store glucose as glycogen, but have a finite amount of storage space so excess sugar is converted to fat and stored. Over time with the excessively dense sources of carbohydrate that are now readily available your body will become increasingly less sensitive to its own insulin causing several diseases namely, Type 2 Diabetes. This type of diet also causes inconsistent mood and energy levels as the blood sugar spikes and falls instead of remaining relatively buffered in a more consistent range.
So why has fat become the enemy? Bad science. Good publicity.
